Key Lime Cups with Raspberry Compote
Makes: 8 Hail Merry cups and ½ cup compote | Time: 15 minutes + time to cool | gluten free, dairy free, vegan
Hail Merry Key Lime Pie Cups
1 ½ cups fresh raspberries (plus 8 for garnish)
1 Tbsp coconut sugar
1 Tbsp lime juice
- In a heavy - bottomed saucepan, combine fresh raspberries, coconut sugar, and lime juice over medium heat. Stir to combine.
- Bring to a boil then reduce heat to medium - low and simmer, stirring often, 8 - 10 minutes, until reduced and thickened
- Remove from heat and transfer to a bowl. Refrigerate until cool.
- Place Hail Merry Key Lime Pie Cups on a platter. Scoop about 1 Tablespoon of compote onto each cup. Top with fresh raspberries, if desired.
