Meyer Lemon Tarts with Blueberry Compote
Makes: 4 tarts and ½ cup compote | Time: 15 minutes + time to cool | gluten free, dairy free, vegan
Hail Merry Meyer Lemon Tarts
1 ½ cups fresh blueberries (plus 4 - 8 for garnish)
1 Tbsp coconut sugar
1 Tbsp lemon juice
1 lemon, zested
- In a heavy - bottomed saucepan, combine fresh blueberries, coconut sugar, and lemon juice over medium heat. Stir to combine.
- Bring to a bo il then reduce heat to medium - low and simmer, stirring often, 10 - 12 minutes, until reduced and thickened.
- Remove from heat and transfer to a bowl. Refrigerate until cool.
- Place Hail Merry Meyer Lemon Tarts on a platter. Scoop 1 - 2 Tablespoons of compote onto each cup. Top with lemon zest and fresh raspberries, if desired.
